Massaged Kale and Avocado Salad
This creamy massaged kale and avocado salad is gentle on the digestive system and high in bone-supporting, dairy-free calcium! Massaging the kale with fresh avocado breaks down tough fibers, making gut-friendly fiber easier to digest. Vegan, allergen-free, and ready in 10 minutes!
- 1 bunch kale
- 1 avocado
- 1 Tbsp extra virgin olive oil
- 1 lemon juiced
- 2 Tbsp nutritional yeast
- 2 Tbsp hemp seeds
- 1 tsp onion powder
- 1 tsp garlic powder
- ¼ tsp salt or to taste
Using clean hands, massage 1 bunch kale and 1 avocado in a large bowl for a couple minutes. This helps the kale become soft making it easier to chew and digest, plus it gets a little creamy layer from the avocado.
Add 1 Tbsp extra virgin olive oil, 1 lemon (juiced), 1 tsp onion powder, 1 tsp garlic powder, 2 Tbsp nutritional yeast, 2 Tbsp hemp seeds, ¼ tsp salt, toss and serve.
